R&D Update: Enhancing Vegetable Consumption through Food Literacy Interventions in Tertiary Setting

This project aims to increase vegetable consumption among university students by making fresh produce more accessible and by equipping students with practical food literacy skills. Partnering with six universities across Melbourne, Foodbank Victoria runs on campus produce markets, ensuring students have access to fresh vegetables and providing them with a variety of educational resources to instil kills and build confidence for healthier eating. Early outcomes indicate strong student engagement due to access to free vegetables and practical food literacy support.

The project has gained awareness through media and industry channels, including coverage on national television news, national radio, industry publications, and online platforms. Early results demonstrate that this combined approach is effective in engaging young adults and encouraging vegetable consumption. Ongoing evaluation and refinement will continue to strengthen delivery of this scalable model and maximise impact for both consumers and the vegetable industry.

This project is funded through Hort Innovation Frontiers, with co-investment from Foodbank VIC, and contributions from the Australian Government.
